One of the Mediterranean's most prized cultivars grows among the hills of Onzo and the surrounding villages: the Taggiasca olive. Small, sweet, and featuring an unmistakable flavor, it is the true symbol of Western Liguria’s agricultural identity.
The pressing of these olives produces a delicate, fragrant extra virgin olive oil with notes of almond and artichoke, and a light bitterness that makes it unique.
Here, among the dry-stone walls and terraces painstakingly carved from the mountainside, olive cultivation is an ancient tradition built on patience, expert hands, and love for the land. At our farmhouse, oil is not just an ingredient: it is a story to be told, tasted, and lived. We serve it at our table, taste it together with our guests, and share it as an essential part of the Ligurian experience.
Organic Taggiasco Oil
Exclusively obtained from our own estate-grown olives, hand-picked and cold-extracted.
Organic farming promotes the natural fertility of the soil without the use of chemicals such as pesticides or herbicides, ensuring better health for both the environment and the consumer.
Cultivating according to organic methods means using techniques that work in synergy with the environment and natural cycles, protecting the agricultural ecosystem and its biodiversity while allowing for sustainable rural development. “Choosing Organic is a way to love ourselves and the environment.”

Olives in Brine, Pitted Olives, and Pâté
From peasant tradition, the finest Taggiasca olives are harvested and prepared just as they were in the past. Discover them in brine, pitted, or try them as a spread on a slice of bread.

Organic PDO Riviera Ligure Oil
Our most prestigious oil is obtained from the oldest olive trees grown on the sun-drenched hills of Onzo, nestled between the Alps and the sea.
Terroir: A well-defined area where natural, physical, and chemical conditions—combined with geographical location and traditional agricultural practices—determine the identity and sensory characteristics of the oil produced in the Ligurian hinterland.
“Choosing PDO means investing in the territory, helping to preserve its characteristics, and protecting centuries-old traditions and historical cultural identities.”

How do we produce our Extra Virgin Olive Oil?
We pay great attention to the cultivation of our olive groves.
When the harvest season arrives, we are committed to ensuring the olives maintain all their organoleptic characteristics, which are then found in the finished oil.
Our oil is obtained exclusively from our own olives, hand-picked and promptly delivered to the mill, where the oil is extracted using cold-pressing techniques.
The PDO Riviera Ligure Certification
The PDO (Protected Designation of Origin) mark certifies the provenance and recognizes the unique characteristics of this oil, determined by the natural, physical, and chemical conditions of the territory and its climate.
We joined the PDO because we want to invest in the land we love and contribute to preserving its features, safeguarding ancient traditions and historic cultural identities.
